

Cantaloupe and Cucumber Salad with a Lime and Agave Dressing

There is no better time than now for this fresh refreshing summer salad. This chilled salad will have you going back for more. This is such a simple recipe. You are in for a treat. Enjoy!
- 1 each- Cantaloupe Melon
- 1 each- Cucumber (of your choice)
- .5 cup- Red Grapes
- 3 Tbl- Agave
- ½ each- Large Lime
- ¼ cup- Olive Oil
- 1 Tbl- Chef Clark’s Seasoning Salt
- 2 Tbl- Rice Vinegar
- ½ each- Lime Zest
- ¼ tsp- Black Pepper
Now that you have all your
ingredients let's get to it.
Wash and drain the cantaloupe, cucumber, and destemmed red grapes.
Cut off the skin of the cantaloupe leaving no green whatsoever, cut in half and remove and discard the seeds. Diced into medium bite size pieces. Reserve
Peel the skin off the cucumber, cut in half and remove and discard the seeds. Dice into medium bite size pieces. Reserve
Cut the grapes in half and reserve.
In a mixing bowl add the Agave, Lime Juice, Lime Zest, Rice Vinegar, Chef Clark’s Seasoning Salt, Black Pepper, slowly whisk and incorporate the olive oil. Place the Cantaloupe, Cucumber and Grapes in a bowl together. Add the Agave Dressing, Mix Well. Plate up and Enjoy!
